  • 2 cups 250 g all-purpose flour
  • 1 ½ cups 300 g granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons apple pie spice
  • ½ teaspoon kosher salt
  • 1 ¼ cups apple cider or apple juice
  • 1 large egg room temperature
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon vanilla extract
  • Topping
  • ¼ cup apple cider
  • ½ cup 100 g granulated sugar
  • 2 teaspoons apple pie spice

Instructions
 

  • Preheat the oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  • Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, apple pie spice, and salt.
  • Combine wet ingredients: In another bowl, whisk together apple cider, egg, melted butter, and vanilla extract until smooth.
  • Make the batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix.
  • Bake the loaf: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Add topping: While the loaf is still warm, brush the top with apple cider. Mix sugar and apple pie spice together, then sprinkle generously over the loaf.
  • Cool and serve: Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack. Slice and enjoy warm or at room temperature.

Notes

  • For extra apple flavor, reduce the apple cider on the stove by half before adding to the batter.
