- ⅓ cup light corn syrup
- 5 tablespoons butter softened
- 1 ½ teaspoons mint extract
- ½ teaspoon salt
- Green food coloring start with a few drops and add more as desired
- 4 –5 cups powdered sugar
- 10 ounces chocolate candy coating such as CandiQuik
Make the filling: In a large bowl, mix together corn syrup, softened butter, mint extract, salt, and a few drops of green food coloring. Slowly beat in powdered sugar, 1 cup at a time, until a soft, dough-like consistency forms.
Shape patties: Roll mixture into 1-inch balls, then flatten gently into discs. Place them on a parchment-lined baking sheet. Freeze for 30 minutes until firm.
Melt chocolate: In a microwave-safe bowl, melt chocolate candy coating in 30-second intervals, stirring until smooth.
Dip patties: Using a fork, dip each chilled mint patty into the melted chocolate, letting excess drip off. Return to parchment.
Set and serve: Allow chocolate to harden completely (about 20–30 minutes). Store in an airtight container in the fridge for up to 2 weeks.
