Ingredients
  

  • 1 cup 230 g unsalted butter, softened
  • 1 cup 200 g brown sugar, packed
  • ½ cup 100 g granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups 190 g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 cups 270 g old-fashioned oats
  • 1 cup 120 g dried cranberries
  • 1 cup 110 g walnuts, chopped

Instructions
 

  • Step 1 – Prep the Oven
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Step 2 – Cream Butter & Sugars
  • In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Step 3 – Add Wet Ingredients
  • Mix in the eggs one at a time, followed by the vanilla extract.
  • Step 4 – Combine Dry Ingredients
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture into the wet ingredients until well combined.
  • Step 5 – Fold in Oats & Mix-Ins
  • Stir in the oats, dried cranberries, and chopped walnuts until evenly distributed throughout the dough.
  • Step 6 – Scoop & Bake
  • Drop about 2 tablespoons of dough per cookie onto the prepared baking sheets. Bake for 10–12 minutes, until the edges are golden but centers remain soft.
  • Step 7 – Cool & Serve
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
