- 2 lbs baby potatoes halved (or quartered if large)
- 3 tablespoons olive oil
- 3 cloves garlic minced
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 1 teaspoon dried Italian herbs or a mix of oregano, thyme, rosemary
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley chopped (for garnish)
Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Prepare the potatoes: Wash and cut the baby potatoes in half. Pat them dry with a paper towel for maximum crispiness.
Season the potatoes: In a large bowl, toss the potatoes with olive oil, garlic, salt, pepper, Italian herbs, and half of the Parmesan cheese until evenly coated.
Arrange and roast: Spread the potatoes cut-side down in a single layer on the baking sheet. Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.
Add Parmesan & serve: Sprinkle with the remaining Parmesan cheese right after roasting. Garnish with fresh parsley and serve hot.
