- 2 pounds medium carrots about 8, peeled and cut into sticks or slices
- 3 cloves garlic minced
- 3 tablespoons unsalted butter
- 1 ½ tablespoons honey
- 1 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ½ small lemon juiced
- Chopped fresh parsley leaves for garnish (optional)
Prep carrots: Peel carrots and cut into even-sized sticks or slices for even cooking.
Cook carrots: Bring a large pot of salted water to a boil. Add carrots and cook until just tender, about 6–8 minutes. Drain well.
Make glaze: In a large skillet over medium heat, melt butter. Add garlic and cook until fragrant, about 30 seconds. Stir in honey, salt, and pepper.
Glaze carrots: Add carrots to skillet and toss to coat in honey butter mixture. Cook, stirring occasionally, for 4–5 minutes until glossy and well glazed.
Finish with lemon: Squeeze fresh lemon juice over carrots and toss again.
Garnish & serve: Transfer to serving dish, sprinkle with parsley if desired, and serve warm.
